Ingredients

  • 3 cups all-purpose flour, plus more for dusting
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 teaspoon sugar
  • 2 teaspoon kosher salt
  • 1 cup (2 sticks) unsalted butter, frozen
  • 1 cup buttermilk, chilled
  • 2 tablespoons melted unsalted butter, divided

Instructions

  1. Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
  3. Grate 2 sticks of frozen butter over the bowl and mix with your hands until the mixture is crumbly.
  4. Add the chilled buttermilk and mix with a wooden spoon until a shaggy dough forms.
  5. Lightly dust a clean surface with flour and add the dough.
  6. Flatten the dough into a 9 x 7 x 1½-inch rectangle. Fold the right side to the center, and then the left side over the top, folding like a letter.
  7. Flatten the dough again into a rectangle with your hands. Next, fold from top to bottom, then flatten it again. Repeat this folding and flattening process about 5 times.
  8. Roll out the dough to a thickness of 1½ inches. Use a 3-inch round cutter to cut biscuits and place on a baking sheet pan with parchment. Freeze for 10 minutes.
  9. Brush with 1 tablespoon melted butter and bake for 20 minutes, or until golden brown.
  10. Remove from the oven and brush with more melted butter.
  11. Enjoy!
