- Creamy chorizo carbonara is a delicious twist on the classic Italian dish. This version combines the rich, velvety texture of a traditional carbonara sauce with the smoky, spicy flavors of chorizo. Ingredients
- ½ pound spaghetti
- 1 whole large egg
- 2 large egg yolks
- 2 cups pecorino, finely grated
- 1 tablespoon olive oil
- 1 cup chorizo, diced
- 3 garlic cloves, minced
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon smoked paprika
- Chopped parsley, for garnish
- salt, to taste
Instructions
- Bring a large pot of salted water to boil and add spaghetti and cook until al dente according to package directions. Before draining, reserve some of the pasta water.
- In a bowl, mix together the whole egg, egg yolks, pecorino and black pepper until evenly combined. Set aside.
- Heat olive oil in a large non-stick skillet over medium-high heat. Add chorizo and garlic and cook for 3 minutes, until the chorizo begins to get crispy.
- Turn off the heat then add cooked spaghetti, a ladle of pasta water, the pecorino and egg mixture, and the smoked paprika. Use tongs to toss until evenly combined and the pasta is creamy.
- Plate it up and garnish with more pecorino and chopped parsley.
