  • This lemon chicken and asparagus stir-fry is a quick and easy weeknight dinner that is full of flavor. The tangy lemon sauce pairs perfectly with the tender chicken and crispy asparagus, making it a healthy and satisfying meal. Serve it over rice or quinoa for a complete meal.

Ingredients

  • ½ tablespoon olive oil
  • 2 chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon garlic
  • 100 grams asparagus
  • Zest of ½ lemon
  • Juice of ½ lemon
  • 3 tablespoons soy sauce
  • Rice, to serve

Instructions

  1. Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.
  2. Add the asparagus, lemon zest, and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
  3. Serve the stir-fry over rice with more lemon zest on top.
  4. Enjoy!
