Ingredients

  • 3 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon onion powder
  • 2 teaspoons soy sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chicken bouillon
  • Cooking spray
  • Chopped scallions, for garnish

Instructions

  1. Make the chicken skewers: In a large bowl, toss together the chicken, onion powder, soy sauce, salt, pepper, and bouillon. Let marinate in the refrigerator for at least 30 minutes or up to overnight for a deeper flavor.
  2. Make the bourbon sauce: In a saucepan over medium heat, melt the butter. Add the minced garlic and ginger. Cook, stirring constantly, until fragrant, about 1 minute. Whisk in the hoisin, apple juice, soy sauce, bourbon, and brown sugar. Bring to a simmer over low heat. Cook, stirring often, for 5–7 minutes, until slightly thickened. Remove from heat, and set aside.
  3. Preheat the air fryer to 375°F (190°C).
  4. Thread the marinated chicken onto 8-inch wooden skewers (about 6 pieces per skewer).
  5. Arrange the chicken skewers in a single layer in the air fryer basket. Coat with cooking spray, and cook for 8 minutes.
  6. Set aside some of the bourbon sauce for serving. Brush the skewers generously with the remaining bourbon sauce. Continue cooking for 6–8 minutes, until the chicken reaches an internal temperature of 165°F.
  7. Brush with the reserved bourbon sauce. Garnish with scallions.
  8. Enjoy!
