The oats are infused with spices like cinnamon and nutmeg, and mixed with diced apples for a sweet, pie-like flavor. Ingredients
- 2 honey crisps apples, diced
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoon vanilla extract
- ⅓ cup brown sugar
- ½ lemon, juiced
- 1 cup rolled oats
- ⅓ cup plain Greek yogurt
- ⅓ cup maple syrup
- 1 cup almond milk
- Granola, for topping
Instructions
- To a large skillet on medium heat, add the diced apples, cinnamon, nutmeg, vanilla extract, brown sugar, and lemon juice. Stir and cook for 2 minutes, or until a thick, syrup-like consistency. Remove from heat.
- To a jar add oats, Greek yogurt, maple syrup, almond milk, and the apple mixture (reserving a few tablespoons for topping). Stir well and refrigerate for at least 10 hours, or overnight.
- When ready to eat in the morning, top it with the reserved apples and granola of your choice. I prefer cinnamon granola.
