Ingredients

  • 2 honey crisps apples, diced
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoon vanilla extract
  • ⅓ cup brown sugar
  • ½ lemon, juiced
  • 1 cup rolled oats
  • ⅓ cup plain Greek yogurt
  • ⅓ cup maple syrup
  • 1 cup almond milk
  • Granola, for topping

Instructions

  1. To a large skillet on medium heat, add the diced apples, cinnamon, nutmeg, vanilla extract, brown sugar, and lemon juice. Stir and cook for 2 minutes, or until a thick, syrup-like consistency. Remove from heat.
  2. To a jar add oats, Greek yogurt, maple syrup, almond milk, and the apple mixture (reserving a few tablespoons for topping). Stir well and refrigerate for at least 10 hours, or overnight.
  3. When ready to eat in the morning, top it with the reserved apples and granola of your choice. I prefer cinnamon granola.
  4. Enjoy!
