Ingredients

  • 2 sticks unsalted butter, softened
  • 2 tablespoons white miso paste
  • 5 garlic cloves, minced
  • 5 sprigs fresh thyme
  • 1 lemon, zested
  • 2 tablespoons chili oil
  • 2 teaspoons flaky sea salt, divided
  • 5 lb. whole chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Fresh cilantro, for garnish
  • Black and white sesame seeds, for garnish

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix together the butter, miso, minced garlic, thyme, lemon zest, chili oil, and 1 teaspoon of the salt. Set aside.
  3. Prepare the chicken by removing the giblets from the cavity.
  4. Next, place the chicken breast side down on a cutting board. Starting at the end, cut along both sides of the backbone with a sharp knife or kitchen shears. Remove the backbone.
  5. Season chicken with the remaining 1 teaspoon salt. Slather the miso mixture evenly over the chicken, and sprinkle all over with the garlic powder and smoked paprika.
  6. Place the chicken on a baking sheet, and roast in the preheated oven until the internal temperature of the thickest portion of the meat reaches 165°F, about 40 minutes, basting every 15 minutes with juices from the chicken.
  7. Garnish with cilantro and sesame seeds, and enjoy!
