Ingredients
- 2 sticks unsalted butter, softened
- 2 tablespoons white miso paste
- 5 garlic cloves, minced
- 5 sprigs fresh thyme
- 1 lemon, zested
- 2 tablespoons chili oil
- 2 teaspoons flaky sea salt, divided
- 5 lb. whole chicken
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Fresh cilantro, for garnish
- Black and white sesame seeds, for garnish
Instructions
- Preheat the oven to 350°F (180°C).
- In a bowl, mix together the butter, miso, minced garlic, thyme, lemon zest, chili oil, and 1 teaspoon of the salt. Set aside.
- Prepare the chicken by removing the giblets from the cavity.
- Next, place the chicken breast side down on a cutting board. Starting at the end, cut along both sides of the backbone with a sharp knife or kitchen shears. Remove the backbone.
- Season chicken with the remaining 1 teaspoon salt. Slather the miso mixture evenly over the chicken, and sprinkle all over with the garlic powder and smoked paprika.
- Place the chicken on a baking sheet, and roast in the preheated oven until the internal temperature of the thickest portion of the meat reaches 165°F, about 40 minutes, basting every 15 minutes with juices from the chicken.
- Garnish with cilantro and sesame seeds, and enjoy!
