- This one pan harissa spiced Moroccan chicken dish is a full meal for two that is packed with flavor.
Ingredients
- 2 chicken breasts
- Pinch of ground pepper
- Pinch of ground cumin

- 1/2 onion, sliced
- 1/2 can of cherry tomatoes
- 100 milliliters water
- 1/2 can of chickpeas (drained and washed)
- 1 tablespoon harissa paste
- 1 teaspoon honey
- 1 courgette, sliced
Instructions
- Season the chicken with pepper and cumin.
- Heat the oil in a large, high-walled pan over medium-low heat. Add the chicken and onion and cook for 3-4 minutes, stirring and turning occasionally.
- Add the cherry tomatoes, water, chickpeas, harissa, honey, and courgette. Simmer for 15 minutes, stirring occasionally, until the sauce thickens.
