  • Spam and egg for breakfast is a quintessential meal from my childhood. This Spam and Egg Rice Breakfast Bowl is packed with flavor and easy to make in a standard rice cooker. Ingredients

  • 1 cup rice
  • 1 teaspoon oil
  • ½ can Spam®, cubed
  • 1 tablespoon soy sauce
  • ½ tablespoon sugar
  • 2 egg yolks
  • 1 cup water, plus more for washing rice
  • 1 scallion, sliced
  • 1 tablespoon furikake
  • Sriracha, to taste
  • Soy sauce, to taste

Instructions

  1. To wash the rice, place it in a large bowl and cover with cold water to submerge. Gently swirl the rice with your hand and pour off the starchy water. Repeat until the water is nearly clear, at least three times.
  2. Preheat the rice cooker by setting it to the Standard mode and turning it on.
  3. Once hot, about 5 minutes, add the oil and Spam. Cook until all sides are lightly browned, about 4 minutes. Season with the soy sauce and sugar. Cook until the sauce has thickened about 1 minute. Remove and reserve.
  4. Add the washed, drained rice and stir to pick up the residual sauce from the rice cooker pot.
  5. Add the egg yolks and mix until combined.
  6. Add the water.
  7. Top with the seasoned cooked spam, being careful not to mix it into the rice.
  8. Close the rice cooker lid and press the start button to cook on the Standard mode, about 20 minutes but may vary depending on rice cookers.
  9. Once done, add the scallion, furikake, and fried egg. Season to taste with Sriracha and soy sauce.
  10. Enjoy!
